Summertime recipes – chicken and shrimp paella

It’s Thursday, and it’s time for another one of our summertime recipes. This week we’ve found a great recipe that we need to thank one of the most vibrant countries in the world for. Patatas bravas, frittatas, churros… do you know which country we’re talking about?! That’s right… Spain!

Spain produces some fabulous food that people across the whole world enjoy on a daily basis. When we think of Spain we think of sunshine straight away which is why we thought this recipe is a perfect one to join our list of summertime recipes. Our recipe this week is for chicken, chorizo and shrimp paella! Yum! Take a look at the ingredients below and learn how to cook the perfect paella…

Here’s what you’ll need:

Oil for frying
2 onions, chopped
2 garlic cloves, crushed
2tsp paprika
3 tomatoes, peeled, deseeded and chopped
2 red peppers
500g chicken, chopped into chunks
150g squid, chopped up
250ml white wine
400g paella rice
Pinch of saffron
1¼pt chicken stock
200g cooked chorizo, thickly chopped
150g frozen peas
150g raw large shrimp

Here’s what you’ll need to do:

1. Heat the oil in a heavy-based frying pan or paella pan and fry the onions with a pinch of salt until they are soft
2. Add the garlic and paprika, cook for a minute, then add the tomatoes, peppers, chicken, squid, white wine and rice
3. Mix well and cook for 5 minutes
4. Add the saffron and stock
5. Season, bring to the boil then reduce the heat to a simmer and cook for 15 minutes, without stirring.
6. Add the chorizo and peas, then cover and cook for an additional 15 minutes
7. Add the shrimp towards the end of cooking
8. Remove from the heat and leave to stand for 5 minutes before serving
